What Sort of Potatoes Varieties Should You Grow?
There are dozens of types of potatoes you can grow. Some are small with
waxy flesh, others are large with floury white flesh, and there is

But 'waxiness' or 'flouriness' is usually a spectrum - some are rather
waxy, some are rather floury, and some are midway between.
The attributes of waxiness or flouriness are also influenced by the
growing conditions, and by the age of the tuber. New potatoes are more
